Country Corn Chowder

1/4 cup butter

1/2 cup chopped onions

3/4 cup diced celery

2 Tbsp. flour

1 qt. milk

2 cups corn (whole kernel)

½ tsp.  salt

¼ tsp. white pepper

2 drops Tabasco sauce

½ tsp. celery seed

2 eggs, beaten

3 slices crisp bacon


Melt butter, and sauté onions and celery until tender.  Blend in flour.  Add milk (all at once).  Stir constantly until slightly thickened.  Add corn and seasoning.

Add some of hot mixture to beaten eggs.  Return egg mixture to sauce pan.  Cook 3 minutes longer.

Serve topped with crumbled bacon.

Serves 6
